The Poggio Rubino estate is located in the area above the hills of Montalcino at an altitude of 470m above sea level, about three kilometres from the town centre and here produces its rare wines. The estate extends over 15ha and the vineyards cover a surface area of 7ha, entirely cultivated with select Sangiovese while the remaining 0.3ha will be planted in Spring 2010. On average, the vines are ten years old with the exception of the most recent ones planted in 2006 at San Prospero. The vineyards are positioned in different areas within the territory of Montalcino. Each individual location and the characteristics of its terrain allow for the attainment of wines with evident personalities accentuating the uniqueness of each individual vineyard.
The most suitable care in cultivation is carried out strictly by hand including the careful selection of canes during pruning and at the moment of the shoot selection along with the thinning of the clusters when the veraison starts. This enables each single vine to maintain a vegetative balance and an excellent distribution of production, thus ensuring the complete maturation of the bunch. The goal is to produce from 1 to 1.5kg per plant in order to force each individual vine into channelling all its energy into those few clusters and, likewise, imparting to each of them the highest possible sugar and polyphenol concentration. In turn, this permits the grapes to reach their full potential from an oenological point of view (polyphenols, tannins and anthocyans) even in most difficult growing years. This type of management allows for both a great limitation in the use and the type of pesticides (in fact, only copper and sulphur are used) and a refusal to use chemical weed control in favour of working the land. The maximum yield per hectare is 50 to 60 quintals.
