We have selected six wine estate that produce wines of the highest level in the areas around Florence, Siena and Maremma.
These wines, blind-tasted , offer various points for reflection on varietal aromas and are perfect to appreciate the differences between a terroir and another.

  • The wine boxes named ‘BLIND TASTING’ belong to the number of educational tastings that have been created specifically for sommelier and wine lovers who are curious to taste wines and territories without being influenced by the label and clichés.

This is pure peach in character, no botrytis, intense lime notes, soft white fruit pulp yet with substance, the residual sugar in perfect balance with the cleansing acidity.

»Riesling pure« is the philosophy of the estate, particularly since Hochheim is credited for the worldwide first documentation of Riesling in history some 550 years ago. The Riesling wines are made rich in extract and due to the high mineral content of the soil both styles are successfully produced: classic-fruity style with overwhelming richness of elegant fruit and spicyness dry style with good substance and a moderate, harmonious acidity. The Pinot Noir is all made in a dry style.

All wines are aged individually in traditional wooden casks. Among the specialties of the estate are full Riesling Spätlese, rich Auslese as well asworld-class BA, TBA and Eiswein with excellent aging potential.

Description Vineyards: Planted in 1963 and 1978 and trained in Guyot. Harvest: Begining of September precise selection of the best grapes. Vinification and maturation: The grapes are left to wither in a ventilated room for about four months. After this period they are softly pressed and the collected must is immediately put in small oak barrels of 50 litre capacity. These barrels, traditionally called caratelli, are placed in the attic of the winery where the wine slowly ferments and matures for 5 years, exposed to temperature changes during the seasons. Refinement: A few months in bottles before release. Ageing capacity: Unlimited. This wine aquires extra complexity with age. Sensory characteristics: Very pronounced amber colour. Intense, fine and pleasant on the nose with notes of raisins and candid fruit followed by honey, vanilla and dry figs with hints of walnut and coffee. At the palate it reveals a full and intense body, with a very good balance between the softness and heat of its alcohol and its freshness. The finish is long and extremely pleasant. Serving suggestion: Matured cheese, dried patisserie and dark chocolate.

The Poggio Rubino estate is located in the area above the hills of Montalcino at an altitude of 470m above sea level, about three kilometres from the town centre and here produces its rare wines. The estate extends over 15ha and the vineyards cover a surface area of 7ha, entirely cultivated with select Sangiovese while the remaining 0.3ha will be planted in Spring 2010.  On average, the vines are ten years old with the exception of the most recent ones planted in 2006 at San Prospero.  The vineyards are positioned in different areas within the territory of Montalcino.  Each individual location and the characteristics of its terrain allow for the attainment of wines with evident personalities accentuating the uniqueness of each individual vineyard.

The most suitable care in cultivation is carried out strictly by hand including the careful selection of canes during pruning and at the moment of the shoot selection along with the thinning of the clusters when the veraison starts.  This enables each single vine to maintain a vegetative balance and an excellent distribution of production, thus ensuring the complete maturation of the bunch. The goal is to produce from 1 to 1.5kg per plant in order to force each individual vine into channelling all its energy into those few clusters and, likewise, imparting to each of them the highest possible sugar and polyphenol concentration.  In turn, this permits the grapes to reach their full potential from an oenological point of view (polyphenols, tannins and anthocyans) even in most difficult growing years.  This type of management allows for both a great limitation in the use and the type of pesticides (in fact, only copper and sulphur are used) and a refusal to use chemical weed control in favour of working the land.  The maximum yield per hectare is 50 to 60 quintals. Directly in farm is possible to taste and buy ours wines Brunello di Montalcino and Rosso di Montalcino and visit all the winery.

Description This cuvee presents a fine aroma of the Traminer grape: delicate scent of roses, lychee and a hint of honey, which can be found on the palate again. The Riesling complements the cuvee with its har- monious acidity and ripe grapefruit nuances that present themselves gently in the finish. The wine received a silver medal at the 2015 Decanter com- petition.

The white wines

The white wine reflects uniquely the terroir of our vineyard with a refined fruitiness and minerality on the finish. Both single sites “Schloss Proschwitz” and “Kloster Heilig Kreuz” are distinguished by a similar soil structure. Both sites are characterized by a six meter thick loess/loam layer resting on top of granite and syanit rocks. However they differenti- ate remarkably in terms of their disposition and micro climate.

Treating the wines with upmost respect is our highest priority, especially during the maturation process. We try to secure the authenticity by controlling the temperature and fermentation precisely, avoiding consciously the manual manipulation of our wine every year. Our wines strive on their personality and not uniformity.
