The Winery

Fonterutoli is located 5 km south of Castellina in Chianti (Siena), on the hills facing the Val d'Elsa, in the heart of the Chianti Classico. Owned by the Mazzei family since 1435, it still retains its original form, that of a tranquil country village: a cluster of houses, the church of San Miniato and the villa, built at the end of the 1500s where once stood the medieval castle.

Today, the estate boasts a total surface area of 650 hectares, of which 117 are devoted to specialized vineyards, divided between five areas: Fonterutoli, Siepi, Badiola, Belvedere and Caggio, located at between 230 and 500 meters above sea level and exposed to the south and southwest.

The soil structure is the result of the disintegration of limestone and sandstone boulders and is very rocky, so much so that Fonterutoli wine is also known as "vino dei sassi", or rock wine. These conditions require respect for the delicate environmental balance and a production volume of less than 40 hl per hectare, which guarantees high quality and a distinctive character. The vineyards’ perfect exposure to sunlight, the excellent pedological and microclimatic conditions and the density of the vines, progressively brought up to over 7,000 plants per hectare, result in the production of complex, elegant and powerful wines.

The Sangiovese grape, created by careful massale and clonal selection, finds itself particularly at home in the four areas of production, expressing its fullest potential: marked aromas and elegance in the highest areas (Fonterutoli and Badiola), structure and potency in the lower ones (Siepi and Belvedere). All the main cultivation operations - pruning, tying, stripping leaves and thinning out the bunches – are done by hand. The harvest is also carried out entirely by hand, at different times for each section, in order to ensure that the grapes reach the cellars at the optimal degree of maturation.

Vinification in special steel vats shaped like truncated cones and reliance on crushing of grapes, yields an exceptional color extraction, with extremely mild, fine tannins and the preservation of all the aromatic components. Once the initial fermentation is terminated, the wines are aged in small oak casks, where they complete their malolactic fermentation. All the stages, from fermentation to ageing in wooden casks, are carried out independently by each vineyard and type of grape, to guarantee an ample spectrum of variations. Shortly after blending, the wines are bottled, then aged for another few months before being sent off to the world’s most important markets.

The character of the wines of the Castello di Fonterutoli has been perfected over the years thanks to continual innovation, in harmony with the winery’s culture, history and heritage of technical expertise.

The oil-making sector shouldn’t be overlooked, either: the estate boasts over 3,500 olive trees of four varieties - frantoio, leccino, moraiolo and pendolino, from which the Castello di Fonterutoli Extra Virgin Olive Oil Chianti Classico DOP is made, of extraordinary fineness and character.

At Fonterutoli, in addition, Carla Mazzei  devotes her energies to the cultivation of Lavender, whose essence is the basis of an intriguing line of cosmetic products, which bear her name.

The Poggio Rubino estate is located in the area above the hills of Montalcino at an altitude of 470m above sea level, about three kilometres from the town centre and here produces its rare wines. The estate extends over 15ha and the vineyards cover a surface area of 7ha, entirely cultivated with select Sangiovese while the remaining 0.3ha will be planted in Spring 2010.  On average, the vines are ten years old with the exception of the most recent ones planted in 2006 at San Prospero.  The vineyards are positioned in different areas within the territory of Montalcino.  Each individual location and the characteristics of its terrain allow for the attainment of wines with evident personalities accentuating the uniqueness of each individual vineyard.

The most suitable care in cultivation is carried out strictly by hand including the careful selection of canes during pruning and at the moment of the shoot selection along with the thinning of the clusters when the veraison starts.  This enables each single vine to maintain a vegetative balance and an excellent distribution of production, thus ensuring the complete maturation of the bunch. The goal is to produce from 1 to 1.5kg per plant in order to force each individual vine into channelling all its energy into those few clusters and, likewise, imparting to each of them the highest possible sugar and polyphenol concentration.  In turn, this permits the grapes to reach their full potential from an oenological point of view (polyphenols, tannins and anthocyans) even in most difficult growing years.  This type of management allows for both a great limitation in the use and the type of pesticides (in fact, only copper and sulphur are used) and a refusal to use chemical weed control in favour of working the land.  The maximum yield per hectare is 50 to 60 quintals. Extra Virgin Olive Oil | Organic

Extra Vergine di Oliva The Extra Virgin Oil is a fresh olive juice that has several virtues. As a precious elixir, it is preserved with extreme consideration and a particular care is given in each phase of production
  • Olive Varieties: Frantoio 60%, Moraiolo 30%, Leccino 5% e Pendolino 5%.
  • Area of production: The olive groves are situated at 400 mt. above sea level on a mixed soil that extends for 44 hectars and holds 8,000 plants.
  • Age of olive trees: Recent trees were planted in the 1980s while the older trees were planted in the 1950s.
  • Plantation density: Around 300 plants per hectar.
  • Training system: polyconic vase.
  • Time of harvest: From late October to late November.
  • Method of harvest: Olives are harvested by hand to ensure that only perfectly healthy olives, of optimal ripeness are selected.
  • Processing: The olives are first washed in order to remove leaves and impurities, then they are cold-pressed at a controlled temperature of 22 ° for approx 30 minutes. The separation of the oil and the vegetation water is realized through centrifugal.
  • Percentage of oil produced from the olives: It varies widely every year, but usually under 15%.
  • Sensory Characteristics: It is a brilliant green color with golden undertones. Its perfume is an intense and persistent wet grass with hints of artichoke and eggplant. It is full bodied with slight tastes of fruit, spice and herbs.
  • Serving suggestions: The ideal use of this particular oil is with authentic cold dishes of raw vegetables soups, salads and dips. However, it is also perfect in cooked sauces and roasts.

The company covers more than 110 hectares of which 44 hectares are cultivated with olive groves. It is fertilized exclusively with organic products or legume green manure, taking full account of nature.The limited production of biological cultures also ensures a better quality, year after year. The olive harvest, like the one of the grapes, is traditionally done by hand for an exclusive selection of raw materials. The extra virgin olive oil derives exclusively from organic olives of the farm, which are still "hand-picked" and then cold-pressed in their own mill.
